When it comes to making ciders, we are truly innovative. We believe the yeast selection and fermentation processes play a major role in the characteristics of the final product. We focus our energy accordingly. We use several yeast strains across our different ciders, sometimes multiple in a single batch. We carefully select the highest quality and most unique adjuncts for recipes that call for them. We also always choose quality ingredients including local hops, raw ginger puree, and American white oak. We don’t believe in following tradition. We believe in innovation.
The Brother Imperial IPA: Without our Brothers, we would have taken the blame for everything as children, wouldn’t have known the inside of an ambulance, and never understood the true fear a good ghost story can cause a young child. This Brother is appropriately big, intimidating, and unbalanced with unrestrained quantities of hops for a head slap of beery ferociousness. ABV: 8.5% | IBU’s: 1 Billion
2016 Bourbon Dark Star: This year’s release is a blend of 18, 12, and 8-month bourbon barrel-aged Dark Star in 12-year old Kentucky Bourbon barrels. The roasted and chocolate malts complement the smooth oats to bring you a stout delight wrapped in gentle embrace of bourbon barrel-aged warmth. A touch of sweetness dances in balance with the hops to finish with a wave and then she’s gone. ABV: 14.5% | IBU’s: 50
